1. The name has to imply that it's a Mexican restaurant. "Jimmy's Cafe" sounds like a diner, not a Mexican restaurant. It can be English or Spanish words, or a combination.
2. It can't have Spanish words that are too hard for the average English-speaker to pronounce. (For example, "Cocina de Parilla" is too difficult. "El Sombrero" is okay.)
3. I want something original. I don't want a name that is already nationally recognized. It's okay if there's a tiny restaurant in obscure town with the same name, but nothing that already brings to mind another restaurant or chain.
4. It has to be catchy. It's easy (and good) to say, "Let's go to Pablo's for dinner." Much harder (and therefore bad) to say, "Let's go to La Hacienda de los Rios for dinner."
