When I order an egg and they ask how I want it prepared, is Poached an option?
Or is it only the traditional over easy / scrambled.

You can order poached eggs. Absolutely. However, some restaurants, Bob Evans is an example, won't poach your eggs. Basted eggs are an acceptable substitute. A basted egg is a Sunny Side Up egg that is steamed, cooking the yolk to warm or totally cooked through; your choice.

It is an option at most restaurants. However, at some of those places it may take up to 30 minutes for a poached egg and a good server will warn you of that. I know when I worked at IHOP they already had the set-up going for poached eggs (so it would take maybe 10 min) but at Cracker Barrel they did not (hince the up to 30 minute time).

There are some restaurants that will poach an egg. But, sometime it isn't really poached, but the kind in the little round thing in a covered pan with water in the bottom.

Depends on where you are and how good the cook is. Also remember that when ordering more then one egg ; that if you get them scrambled
you never are sure if they give you your whole order.

Scrambled delicate (runny), sausage, domicile fries, rye toast, espresso and a tomato juice. Overcooked eggs are as undesirable as over cooked meat. people who do not savour food overcook it.

Yes it is an option. They will know how to do it too, if they are a real restaurant.
